Gravner's Winemaking Evolution
Josko Gravner is Friuli’s most profound and influential winemaker,
an eminent genius who has produced some of Italy’s most compelling
white wines since commencing production in 1975. His career is defined,
in large part, by his fearless pursuit of innovative approaches to his
craft, commencing with the perfection of fermentation techniques in stainless
steel and temperature control. As others began to implement his methodology,
Gravner abandoned these efforts and pursued the mastery of barrique fermentation
and aging. The wine industry and enthusiasts around the world received
his efforts enthusiastically. Once again, however, as winemakers
sought to adopt the latest “Gravian” practices, he revoked
his modernist agenda and sought guidance and direct inspiration from ancient
winemaking traditions, employing the medium of clay amphorae to make his
wines.
Unlike his
recent wines (1997 –
2001), these wines are not about long maceration, botti aging,
or amphorae. They are young, bright, and vibrant, defying
the laws of winemaking with their ability to age.
This offering of vintage Gravner is extremely rare due to the limited availability
of these wines. All of these wines come from a period when Josko had abandoned
his father’s old botti and combined stainless steel
fermentation with barrique aging. The 2000 vintage represents
the end of an era as this was the last year that Gravner's
wines underwent open vat fermentation.
Rare Vintage Breg
The grapes for the
Breg are manually pressed and fermented separately on their
skins in these large, open oak barrels for an extended
maceration period. The pomace was then removed and juice
was placed in large oak casks for a maturation period of
three years.
Josko recommends
drinking this white wine at room temperature to capture
its full expression. The cider color picks up a pinkish
hue, not from the wood or the amphorae, but from the Pinot
Grigio. Each grape imparts a signature characteristic that
gives this wine a rare spectrum of flavors and uncommon
depth. It is of note that during the years 1990 and 1991,
the wine was known as Bianco Gravner before settling as simply ‘Breg.’

Rare Vintage Ribolla
Like
the Breg, the 2000 Ribolla underwent open vat fermentation
and it represents Gravner’s final use of this methodology
for the crafting of this wine. In the open vat methodology,
the grapes are manually pressed and fermented separately

maceration period. The pomace is then removed and the juice
placed in large oak casks for a maturation period of three
years.
