Novaia Amarone della Valpolicella is the masterpiece
of the Veneto. Carefully selected grapes are spread out
to dry on mats, during which time they lose much of their
initial water weight, dramatically concentrating their sugar
content. The raisinated grapes are then crushed and fully
fermented into a heady and robust wine with rich flavors
of raisins, dried figs, spice, mineral, and tar. In one
of the most luxurious areas of Alta Valpolicella, a large
manor sits on a sunny hilltop overlooking the Marano Valley.
