Castel de Paolis Although the light and negligible wines of Frascati have impaired the image of Lazio's Castelli Romani DOC (which encompasses Frascati and eight other DOC zones), not all white wines issuing from this zone reflect the prevailing "wine for the masses" mentality. In fact, Giulio Santarelli founded Castel de Paolis in order to validate the region's capacity to produce quality wines. He has pursued a qualitative regime by drawing on the expertise of renowned winemaker Franco Bernabei. Moreover, while many of the area's blends feature a significant percentage of Trebbiano-a grape that is known for its undemonstrative character-Castel de Paolis' whites do not privilege Trebbiano; in fact, of the whites contributing to two of Castel de Paolis' wines, it represents the lowest varietal percentage. Santarelli's efforts have been validated in the affinity critics have noted between the wines of Castel de Paolis and Californian whites.
