Italy
does not make many contributions to the world of blue
cheese (Gorgonzola being the most notable exception)
but Blu del Moncenisio is an example that should be
known by cheese lovers. It is an ancient cheese which
has references that date back to the 11th century. Made
from raw cow’s milk, it originates from the mountainous
Valle di Susa, in the Italian Alps where Piemonte borders
France. The texture is firm and creamy, marbled with
a lot of bluish green veins. It has a sharp, complex
aroma and a decisively peppery flavor.
Wine Pairings: Blue Cheese is best matched with any
type of sweet wine to combat the saltiness and pungency.
Moscato d’Asti, or any other Italian dessert
wine of your choice would be perfect.
